Scholarship Description
A scholarship is available for an outstanding PhD candidate to investigate the relationship between processing parameters and protein gel microstructures that determine rheological properties of yoghurt. The project focuses on characterizing the rheological and micro-structural properties of yoghurts, and development of well-defined lab-scale processing equipment and/or methodologies to mimic actual processes occurring during yoghurt manufacture. Graduates with 1st or 2nd class honors from Chemical Engineering, and Chemical and Biological Engineering, with good experimental skills are encouraged to apply. Excellent graduates with honors and/or Masters degrees from Food Sciences and Engineering disciplines would also be considered.
